Ingredients

2 corn cobs (or 1 tin sweetcorn)
1 ripe avocado
1 tin black beans, drained
100g cherry tomatoes, halved
Large handful mixed greens
1 lime, zested & juiced
1 tsp cumin
Handful fresh coriander
Feta or vegan cheese
Pumpkin seeds (optional)
Olive oil, salt, pepper

Method

1Char the corn directly on a gas flame or dry griddle pan until well-marked, turning every minute. Cool slightly, then slice the kernels off the cob.
2Make a quick dressing: whisk lime juice and zest, olive oil, cumin, salt, and pepper. Taste and adjust — it should be punchy.
3Build the base in a wide bowl: mixed greens, black beans, charred corn, cherry tomatoes, and sliced avocado.
4Drizzle the dressing and toss gently. Crumble feta across if using.
5Spoon Xalapa Kraut generously across the top — cold, straight from the jar. Scatter coriander and pumpkin seeds. Eat immediately.

Tips
