An Obsession of Bold, Fresh Flavor

Food has the power to connect generations. Whether it’s learning family recipes or the intense memories triggered by the flavors and aromas of our childhood.

Our signature

Wild-fermented. Slow-made.
Alive with every forkful.

Xalapa is the Mexican city that gave jalapeño its name — and gave us our obsession. We take that heat, pair it with slow wild fermentation, and let time do the rest. The result is a kraut with real bite, real culture, and a flavour that builds.

No vinegar. No pasteurisation. No compromise. Just a living ferment that gets better the longer you let it sit in your fridge.

Feedbacks We Work For

Canbo's ferments are properly a

live balanced acidity,

real vegetable character,

and no shortcuts.

This is the kind of

fermentation chefs

actually want to cook with.

Oliver Trent

Chef

Didn’t expect sauerkraut

to carry spice this elegantly.

The jalapeno notes are warm,

not shouty, and the ferment

gives it real depth.

I’ve been putting it

in toasted cheese sandwiches

and it’s frankly dangerous.

Arthur Bell

Food Critic

This tastes alive.

The heat is fresh

rather than aggressive,

and the jalapeño works

beautifully with the sour crunch.

I eat it with eggs, dal,

even straight from the jar.

Mina Patel

Food Blogger

Adana Kraut reminds me

of home, but cleaner and fresher.

The vegetables still have life

and crunch, and the fermentation

is beautifully judged.

It’s comforting and exciting

at the same time.

Mert Guler

I think I am addicted to Ferment Blue,

can't stop eating.

Flowers inside are

really good touch,

literally made my day!

How We Do

Frequently asked questions

What is lacto-fermentation?

Lacto-fermentation is a natural preservation method where vegetables are submerged in a salty brine, encouraging beneficial bacteria (lactobacillus) to thrive. These friendly bacteria help develop a tangy flavour while keeping the vegetables safe to eat — no vinegar, heat, or artificial preservatives required.

Are your fermented products unpasteurised?

Yes! Our products are raw, unpasteurised, and full of live cultures, which means they’re rich in probiotics and beneficial enzymes. This also means they must be stored properly to stay fresh.

How should I store my jars?

Keep unopened jars in refrigerator for all times. Once opened, refrigerate and consume within the time recommended on the label. Always use a clean utensil to remove fruits or veggies from the jar to avoid introducing unwanted bacteria.

Do you use any artificial preservatives or vinegar?

No. We make our pickles using only vegetables, salt, herbs, and spices — nothing artificial.

Are your products vegan and gluten-free?

Yes, 100% vegan and gluten-free. Made in a shared kitchen handling peanuts, tree nuts, gluten and milk. Not suitable for those with a nut, gluten or milk allergy. Some flavours may contain mustard seeds.
